Every once in awhile, this girl cooks.


March fourth, being the only day of the year that is a command, also happens to be Parade Day (not an official holiday) and more importantly, Joel's birthday. It's a busy day for us today, so I decided we were going to have to celebrate with breakfast.

After doing some searching on the google, I decided that we were going to have these breakfast pita pockets. I actually searched "birthday breakfast for husband," but not before accidentally typing "husband" - and, hoo boy, did that get some bizarre results. They were pretty delicious, and unfortunately I did not take any pictures because I am too impatient to take pictures of all my food before I eat it.

The most exciting thing about this is that I made a new recipe, a larger meal, without any SNAFUs. This is huge. I did not grow up cooking and I am still learning, and I almost always forget some major ingredient. Not this time.

Along with the pita pockets, we had fresh fruit, orange juice, and coldpress. After the healthier portion of our meal, we had some homemade cinnamon swirl sticky buns.


These things were absolutely, knock-your-socks-off delicious (again, notice the picture was taken afterward). I got the recipe from Smitten Kitchen, a website I feel I can always trust.

I did make a couple variations: instead of whole milk I used unsweetened almond milk, and since I didn't want to wake up at 4 in the morning, I put the rolls in the refrigerator after the second rise. In the morning, I took them out of the fridge and let them sit on the counter for about an hour ... I really don't know if that made a difference or not? But, they were good and I liked the really slight almond taste to them. Mmmmm, I'm almost regretting forcing Joel to take them to work and share them. But I did that because I knew I would not have any self control ...

So, that's that.

Happy birthday to my favorite guy! There's nobody else I'd rather be stuck in Brainerd with. :P

  1. I've wanted to try those rolls from Smitten Kitchen for a long time. Unfortanetly, Adam has forbidden me to bake for awhile.
